The yellowtail snapper is an abundant species of snapper native to the Florida Keys and is highly prized for its light, flaky meat and is considered to be one of the best of the snapper family.
Most anglers pursue yellowtail snapper during the warmer months, but they can be caught throughout the year.
It’s also the species of fish that you will most commonly find in the restaurants and fish houses throughout the Florida Keys.
Not being a fisherman, it’s good to have a great relationship with your fish monger.
A phone call that never got old was when Mr. Ramon Rodriguez at the Rusty Anchor on Stock Island would call to let me know that he just got in some really nice yellowtails.
When it came to knowing seafood and how to treat it, Ramon was the best. He is certainly missed.
This particular fish was a good sized one too!
