Key Lime Potato Chips
3-4 Russet potatoes
4-6 cups oil for frying
Key West Spice Company Key Lime Seasoning
Wash potatoes, use very sharp knife or a mandolin, about 1/16 inch thick. Sock potato slices in ice water for 30 min to remove starch. Remove slices from water and dry them, the dryer the crisper your chips will be. Heat oil to 350 degrees. Fry in small batches until golden brown. Remove with slotted spoon or wire mesh strainer. Place hot chips on a plate lined with paper towels and sprinkle with Key West Spice Company Key Lime Seasoning while chips are still hot. Let cool and enjoy! Pro tip: go easy on the spice at first until you find the level you desire.
