Key Lime Shrimp Scampi
Ingredients
1 lb large shrimp, peeled and deveined
2 tbsp olive oil
3 tbsp butter, divided
3 cloves garlic, minced
½ cup dry white wine (or chicken broth)
Juice of 1 lime
Zest of 1 lime
2 tsp Key Lime Seasoning
8 oz linguine or angel hair pasta
2 tbsp fresh parsley, chopped
Directions
1. Cook the pasta
Cook pasta according to package directions.
Reserve ½ cup pasta water before draining.
2. Season the shrimp
Toss shrimp with:
1 tsp Key Lime Seasoning
1 tbsp olive oil
Let sit while the pasta cooks.
3. Cook the shrimp
Heat remaining olive oil and 1 tbsp butter.
Cook shrimp:
about 1½ minutes per side, just until pink
Remove from pan.
4. Make the sauce
Add:
remaining 2 tbsp butter
garlic
Cook 30 seconds.
Add:
white wine
lime juice
lime zest
remaining 1 tsp Key Lime Seasoning
Simmer 2–3 minutes.
5. Combine
Add:
shrimp
pasta
Toss well.
If needed, add a little reserved pasta water to loosen the sauce.
Finish with parsley
